  Recipe | Tomato Sauce

  • Ingredients
  • Dibber - straight or T. Oil with linseed oil and adorn with silver bells and get blessed. Oil cricket stumps work well (non varnished of course)
  • Secateurs - well oiled and clean
  • Shovel - hardwood shaft
  • String - hemp
  • Bamboo stakes - from a friend, don't plant in garden. Devilish things to get rid of.
  • Rotary Hoe - Borrowed or inherited, never bought.
  • Lupin Seed
  • Mustard Seed
  • Oat Seed
  • Blood & Bone
  • Gypsum (where needed).
  • Seed Garlic (don't use Chinese store bought Garlic)
  • Stuttgart Long Keeper Onion Seed
  • Cherry Tomatoes
  • 3 Boys Beer - suggest indian pale ale (IPA)
  • Woodshed - hand built (badly), not aluminum.
  • Purchase everything from a locally owned store.
  • A cook.
  1. Double dig area 5 metre by 3 metre in March.
  2. Add blood and bone 100 gm per square metre.
  3. Add Gypsum 500 gm per metre (depending on soil type).
  4. Drink beer and look at garden.
  5. In area 5 metre by 1 metre plant garlic before ANZAC day. One clove per 10 cm to a depth of 3 cm. Plant 3 rows, 20 cm apart.
  6. Plant a green manure crop; a mix of lupins, mustard seed and oats in remainder of area. Do this before ANZAC Day.
  7. Rotary hoe entire green manure crop in September or prior to seed set. Dig in another 100 gm of Blood and Bone or your own manure.
  8. Plant Stuttgart Long Keepers, seed available from Kings Seeds. Use 5 metres by 1 metre. Ensure fine seed bed. Plant three rows 1 cm deep, 20 cm apart. Leave about 7 cm between plants after thinning. Use cloches to push crop if in southern regions.
  9. Plant out Cherry tomatoes, buy as seedlings. Can grow from seed, but can be tricky. Do not plant out before Canterbury Show weekend. Plant out 12-14 plants. Stake early to avoid damage to roots. Remove laterals. Let 5 fruit spurs per plant develop.
  10. Harvest garlic and onions prior to seed set. About February-March. Make sure they are well watered as February can sometimes be a dry month. Do not let woody stems develop.
  11. Wait until about a third of leaves of onion and garlic are starting to brown off. Dig up entire plant. Leave to cure on soil 2 weeks.
  12. Hang to dry in well ventilated shed. Trim off soil, roots and tops. Place in wicker basket. Harvest tomatoes that are left. Place in wicker basket.

    Give to the Cook. Retire to woodshed with dog, a glass of pinot, a good book and wait. There is other stuff that goes in the sauce but the cook will work that out.

  Recipe | Spicy French Toast

  • Ingredients
  • 3-4 eggs
  • Milk
  • salt & pepper to taste
  • 1-2 green chillis finely chopped. quantity may vary, depends how hot those chillis are!
  • Sliced bread.
  1. In a bowl add the eggs, dash of milk, Green chilli's, salt and pepper. Mix till combined.
  2. Heat frying pan, and add butter until melted.
  3. Dip bread slice in egg mixture till fully coated, and add to hot pan.
  4. Cook on both sides until golden brown.
  5. Served immediately.

    Serving Suggestion : Top the spicy toast with rashers of bacon. Will go down well with a cold glass of OJ.

  Recipe | Reet-Posh Burgers

  • Serves 4
  • 500g Good quality minced beef
  • 1 Garlic clove - crushed
  • 1 Whole chilli - finely chopped
  • 1 Onion - finely chopped
  • Sliced Cheese (Monteray Jack if you can get it)
  • Rocket
  • Ciabatta bread (cut into about 12cm or burger bun size)
  1. Combine mince, garlic, chilli and onion. Season well with lots of salt and pepper.
  2. Roll/Shape the mince into four evenly size balls and pat into a patty/burger shape, about 2cm thick Leave to chill in the fridge for an hour or so.
  3. Fry the patties on a grill or BBQ, turning occasionally, until juices run clear. DO NOT squeeze the patties, you’re trying to keep as many of the juices in as possible. On the last turn place the sliced cheese on top of the patty to allow it to partially melt.
  4. Toast Ciabatta, Add cooked Burger, top with rocket. Eat.
  5. Best served with a nice cold beer.
